ABSTRACT

Naomichi Ishige explains the present dietary life of Japan as this : today's food culture is the phenomenon that such a thing as an information that has been accumulated for a century since eating the meat was permitted, realised at once corresponding to the wealthy life in Japan society. This suggests various meanings, but this thesis handles the education of food in the respect of the accumulation of information about food in Taisho Period and what the education influenced to the food culture of the general house. In Taisho Period, those concepts such as nutrition and nourishment that were used by an ideologist of enlightenment, were earnestly studied and were spread to the people, and the concret change of dietary life was demanded through the cooking training or printed matters. That is, as the western food and rarely the Chinese food were introduced to the homebred, the weight of the education of food in the society through the school education and a publication such as journals and news papers, etc. became higher while that of the cooking handed over to the daughter by the mother did lower. The cooking class in the school of women's and the women's journal contributed to the development of various menus with the practical article about food and to spread the recognition of a model house wife who could cook according to the article. Through the study mentioned above, it is found that those education of the dietary life was the chance to accept the new daily dietary life without the direct experience of foreign. The process of accepting the dietary life which is very personal was not each one's voluntary one but the negative one under the supervision of government.
